The Mirandable

I've have always believed that life has so much to offer, so why not do the things you love and the things that scare you? I love to create and I am also terrified of putting myself out there, but it's the little things that make life memorable. This is my outlet to simply be me, put to also use my outlet to bring knowledge and awareness to the things that matter most to me. My Favorite Tomato Soup Recipe


In this new journey that I have been in with my allergies, I have started to explore different recipes that make my tummy feel better. Personally, I am not a big fan of soup, but I didn't want to say 'no' to all the options. When it comes to soup, I like my soup thicker, so tomato soup was the perfect thing to try. That being said here is the recipe...


Ingredients:

  • 4 tomato's

  • Half an onion (I used a yellow onion, but you can whatever type you'd like)

  • 1 garlic head

  • 2 carrots

  • Oregano

  • 2-3 Fresh Bay leaves

  • Coconut Milk

  • Salt

  • Pepper

  • Sugar

  • Olive oil

Preparation:

Step 1: Wash the tomatoes and carrots. After washing them, peel the carrots, and then rough chop the tomatoes, carrots, and onion.


Step 2: Get a non-stick oven tray and put your tomatoes, carrots, garlic head, and onion on the tray. Coat the vegetables with some olive oil (I usually eyeball it, but I would say about 2 tbs) and season with salt, pepper, and oregano (or whatever other seasonings you would like).


Step 3: Place the vegetables in the oven for about 40-45 minutes.


Step 4: After the vegetables are done in the oven and are soft, let it cool for about 20 minutes. After cooling, blend all the vegetables.


Step 5: In a large pot, strain the mixture that you blended, and let it simmer on medium heat for about 20 minutes. In the meantime, add 1 can of coconut milk into the soup (you can substitute this with water, or chicken broth if you'd like).


Step 6: At this point, you should allow your tomato soup to sit at a simmer, if you wish to add more seasonings to your liking, this would be the time to do so.


Step 7: Enjoy your delicious tomato soup :) You could even pair it with some croutons or a grilled cheese sandwich.

  • Crumbled tortilla chips

  • Collagen powder (extremely beneficial for humans!)

Why Tomato Soup?

As I mentioned earlier, I have a list of allergies that I have been learning to adapt to. In this journey, it seems like my food options are extremely limited, so I decided to explore some more with recipes. Tomato soup is the perfect meal to have, that won't make me feel sick, and it's super affordable and delicious. This recipe is perfect for anyone, regardless if they have allergies or not. I hope you enjoy :)
